MEATLOAF CHEESEBURGER

This is a family favorite recipe for a busy day.

Even though my days of carpooling are over, days still tend

to get away from me but the family still needs a good dinner.

This meatloaf is not only easy, but it is delicious and can be prepared

ahead of time and finished off just before dinner time.

 

2 LBS GROUND BEEF

¾ CUP BREADCRUMBS – flavored

½ CUP ONION – finely chopped

SALT – to taste

FRESHLY GROUND BLACK PEPPER – to taste

3 CUPS SHREDDED CHEESE – Swiss, Cheddar, Pepper Jack, your favorite

2 EGGS – beaten

¼ CUP KETCHUP – or more to taste

 

 

PREHEAT OVEN TO 350º

In a large bowl combine, ground beef, breadcrumbs, onion, salt, pepper, eggs, and ketchup and mix well. Form the meat into a flattened ball.

On a large piece of parchment paper or wax paper place the flatten ball and pat down fairly firmly until you have a rectangle approximately 12 X 16-inches.  You can make the shape any size you feel is manageable. Cooking time will vary on the thickness.

Spread the freshly shredded cheese over the meat leaving a border all around the edge and pat down lightly into the meat. Roll the meat up jellyroll style to enclose the filling. Pinch both ends to keep cheese intact. Place in a large lightly greased baking dish or on a parchment paper lined baking tray.

Bake in a preheated oven for about 50-60 minutes or until the internal temperature reaches 160º. Pour some pan juices over the top and let cool for just a few minutes. Slice and serve.

NOTE: although I usually serve with French fries because, of course, it is partly a cheeseburger, this dish is also enjoyable with buttered or flavored rice. I prepare the loaf anytime during the day that I have time and pop it in the oven just before dinner time.
