LEFT OVER TURKEY THOUGHTS

We are basically a dark meat family but we rarely have any turkey left over even though we purchase one that averages about 24 lbs.  There are lots of things we do with the turkey which requires a large one as we do want to have leftovers. The day after Thanksgiving all of the family is together again. Those who have a free day go shopping and then there are those who have to work. But we are together again for dinner. Everything is laid out on the counter, and we serve buffet style. Doesn’t even matter if someone wants to eat dessert first. If you were too full for dessert on Thanksgiving, why not! We make a few focaccia and the family piles on what they want and we toast it in the paninni press. Everyone assembles their own and some of the fillings are interesting. In the end, Gary, our son-in-law takes the carcass home and makes soup.

However, should there be any white meat left over this is what I do.

Take 5 cups of cooked shredded turkey, 2 cups cooked stuffing, 1 cup chopped celery, 1 cup chopped onion, 1 cup slivered almonds, 2 cans cream of chicken soup (undiluted) 1 cup mayonnaise, 3 teaspoons of freshly squeezed lemon juice , 1 ½ cups shredded cheese (I use Colby). Proportions are just suggestions!

Mix all together and place in a lightly greased baking dish. Sprinkle with a little added cheese. Bake in an oven preheated to 350º for about 40-45 minutes. Let cool for a few minutes to set.  Pass some heated gravy.

And that’s the end of turkey for our family for another year!
