GARLIC CHILI BUTTER SHRIMP

Such an easy dish to make and so full of delicious flavors.

A complete meal when served over pasta or with rice.

 

1 ¼ LBS LARGE SHRIMP – peeled, deveined

4 – 5 TBS BUTTER

5 GARLIC CLOVES – minced

1-2 RED CHILI PEPPERS

KOSHER or SEA SALT – to taste

BLACK PEPPER – freshly ground – to taste

¼ CUP DRY WHITE WINE – your favorite

¼ CUP BASIL – torn

 

Heat oil over medium heat in a large skillet. Add the shrimps and season to taste with salt and freshly ground black pepper. Sear quickly for no more that 2 minutes on each side or just until the shrimp are starting to turn pink.

Using the wine, quickly deglaze the pan scraping up all the browned bits that have accumulated on the bottom of the pan. Add the butter, garlic, red chili peppers and basil and stir until all combined.  Toss the shrimp through this sauce and cook for about 1 minute or until the shrimp are cooked through.  However, be very careful to not overcook which is easy to do.

When shrimp are nice and pink and well saturated with the butter sauce, remove from heat and serve immediately.
