INGREDIENTS:
- 1 cup butter – softened
- ½ cup sugar
- 2 tsp almond extract
- ½ tsp vanilla extract
- Pinch of sea salt
- 2 cups flour
- ½ cup sugar
- Extra sugar for dusting
- Extra pinch salt – optional
METHOD:
- Preheat oven to 350ºand line 2 baking sheets with parchment paper.
- In a large bowl beat together the butter and sugar until light and fluffy.
- Add the extracts and a pinch of salt. Mix in well. Add the flour and mix just until all is well combined. Do not overmix.
- In a rimmed dish, combine sugar with an optional pinch of salt.
- Roll the balls into a size of about 1-inch and then roll in the sugar making sure they are well coated.
- Place on the lined baking sheets. Press down on them lightly with the back of a soup spoon to flatten just a bit.
- Bake until the edges are golden. – 12-15 minutes. Cool on a wire rack.
