The Classic Philadelphia Cheesecake. A classic dessert cheesecake that has stood the test of time.
SERVINGS: Makes 16 servings, 1 piece (118 g) each.
INGREDIENTS:
- 1 cup graham crumbs
METHOD:
- Heat oven to 325ºF.
- Mix crumbs, 3 Tbsp. sugar and butter; press onto bottom of 9-inch springform pan. Bake 10 min.
- Beat cream cheese, 1 cup sugar, flour and vanilla in large bowl with mixer until blended.
- Add sour cream; mix well.
- Add eggs, 1 at a time, mixing on low speed after each just until blended.
- Pour over crust.
- Bake 1 hour 10 min. or until centre is almost set.
- Run knife around rim of pan to loosen cake; cool before removing rim.
- Refrigerate 4 hours.
TIPS:
How to Test For Doneness
Gently shake the pan. If the cheesecake is done, it will be set except for a small area in the centre that will be soft and jiggly. Do not insert a knife into the centre as this may cause the cheesecake to crack upon cooling.
Special Extra
Slice 2 cups fresh strawberries; arrange on top of chilled cheesecake. Brush with 2 Tbsp. melted strawberry jelly.
