This is one of my go to recipes when I need an appetizer quick and easy!
INGREDIENTS
- 8 Tbs Softened Butter
- One Full Sleeve of Crackers +6 More
- 2 Cups Onions
- 1 ½ cups Swiss cheese (actually you can use any cheese you like but this seems to work best)
- 2 eggs
- 1 cup milk
- salt and pepper to taste
METHOD
Preheat oven to 350º
Smear 6 tablespoons of softened butter all over a 10-inch pie plate.
Crush one full sleeve plus about 6 crackers more of Ritz crackers. Pour these into the buttered dish and press hard to make a fairly firm crust.
Fry 2 cups of thinly sliced onions in 2 tablespoons of butter for about 3-5 minutes, until soft. Take off heat and mix in 1 ½ cups Swiss cheese (actually you can use any cheese you like but this seems to work best), 2 eggs beaten until frothy, 1 cup milk and salt and pepper, to taste.
Carefully pour all this into the pie shell and bake for 1 hour or until the top is golden brown. Let sit for 5 minutes before serving.
You will wish you made two when you see how fast this disappears!
