Flavorful and delicious and a little dilly!
4 CUPS CUCUMBERS – thinly sliced
1 TB KOSHER SALT
1 CUP RED ONION – very thinly sliced
1 TB FRESH DILL – minced
RED PEPPER FLAKES – to taste
½ CUP WINE VINEGAR – red or white
1/3 CUP SUGAR
Slice cucumber thin. Place in a bowl and sprinkle with the Kosher salt. Toss to coat all and set aside for at least 30 or 40 minutes.
Rinse in a strainer with cold water, drain well and blot excess moisture with a paper towel.
Place cucumbers in a serving bowl and top with the sliced onions, dill and red pepper flakes.
Whisk vinegar and sugar together, pour over the cucumbers and mix well.
Cover and refrigerate for several hours.
NOTE: tomatoes and cucumbers go well together. To make this salad a little heartier, slice some small grape tomatoes in half and mix in about 30 minutes before serving and sprinkle with some freshly torn basil.
