Stracciatella (Italian Roman Soup)

Stracciatella is a traditional roman style soup. It’s simplicity in preparation and flavor makes it a perfect beginning to any meal.

In this recipe I added chicken. Traditionally it’s just a broth with egg and Parmesan cheese.

Besides the chicken I will sometimes add fresh baby spinach.

The fun part of making this dish is swirling in the egg.

Sracciatella takes around 15 minutes to prepare and is definitely a family favorite.

SERVING: Serves 4 people

INGREDIENTS:

  • 2 eggs
  • 1/4 cup of fresh grated parmesan cheese
  • 1/4 cup of fresh Italian flat leaf parsley, chopped
  • 1/8 tsp of nutmeg
  • 1/4 tsp of salt
  • 1/4 tsp of white pepper
  • 1 quart can of chicken broth
  • 2 chicken breast, cooked and shredded

METHOD:

  1. In a medium size bowl beat together the eggs, cheese, parsley, nutmeg,salt and pepper.
  2. In a large pot bring the broth to a boil.
  3. Pour in the egg mixture in streams.
  4. Add the chicken lowering the heat and simmer for 2 to 3 minutes.
