Stracciatella is a traditional roman style soup. It’s simplicity in preparation and flavor makes it a perfect beginning to any meal.
In this recipe I added chicken. Traditionally it’s just a broth with egg and Parmesan cheese.
Besides the chicken I will sometimes add fresh baby spinach.
The fun part of making this dish is swirling in the egg.
Sracciatella takes around 15 minutes to prepare and is definitely a family favorite.

SERVING: Serves 4 people
INGREDIENTS:
- 2 eggs
- 1/4 cup of fresh grated parmesan cheese
- 1/4 cup of fresh Italian flat leaf parsley, chopped
- 1/8 tsp of nutmeg
- 1/4 tsp of salt
- 1/4 tsp of white pepper
- 1 quart can of chicken broth
- 2 chicken breast, cooked and shredded
METHOD:
- In a medium size bowl beat together the eggs, cheese, parsley, nutmeg,salt and pepper.
- In a large pot bring the broth to a boil.
- Pour in the egg mixture in streams.
- Add the chicken lowering the heat and simmer for 2 to 3 minutes.
