Here is the spicy, savory, juicy chicken thighs. A great chicken dish with a little kick!
SERVING: Serves 6-8
16 CHICKEN THIGHS
JUICE FROM 1 LARGE LEMON
2 TBS KETCHUP
2-3 TSP GARLIC POWDER – or to taste
2 TSPS ONION POWDER – or to taste
3 TSPS GRAM MASALA
2 TSPS CUIMIN
2 TSPS CORIANDER
2 ½ TSPS BROWN SUGAR – dark
A FEW TORN FRESH SAGE LEAVES – to taste
1 TSP PAPRIKA
2 TSPS CHILE POWDER
1 TB FRESH BASIL – finely torn
- In a large bowl, place the chicken thighs and season with lemon juice, ketchup, garlic and onion powders, coriander, cumin, garam masala, dark brown sugar, Chile powder, paprika, sage and basil. Mix well to combine all the seasonings and then gently massage the seasonings on top and underneath the skin of each thigh.
- Cover the bowl with plastic wrap, place in the refrigerator and let marinate over night or for at least 8 hours.
- Preheat oven to 400º.
- Cover a baking dish with aluminum foil and spray with cooking spray. Spread chicken thighs throughout the baking pan. Bake for about 45 – 50 minutes until tender, juicy and cooked through.
NOTE: Serve with rice and your favorite cucumber-onion salad.
