The Pan Speziale Christmas cake

“Pan Speziale” is so-called because it was prepared by the friars of the Bologna Charterhouse and is a typical sweet for the Christmas period.

 

INGREDIENTS:

  • 7 oz all-purpose flour
  • 3 ½ oz sugar
  • 3 ½ oz honey
  • 1 ¾ oz raisins
  • 1 ¾ oz almonds
  • 1 ¾ oz pine nuts
  • 1 ¾ oz citrons
  • 1 ¾ oz chocolate , bitter
  • baking powder
  • clove
  • coriander
  • cinnamon
  • anice seed
  • butter to taste

METHOD:

  1. Mix spices, yeast, honey, and sugar with the boiling water and the flour.
  2. Add raisins (previously left to soak in water), almonds, citron, orange, pine nuts and chocolate.
  3. Put the mixture into an oven-dish and bake at 350°F for 30-40 minutes.
