“Pan Speziale” is so-called because it was prepared by the friars of the Bologna Charterhouse and is a typical sweet for the Christmas period.
INGREDIENTS:
- 7 oz all-purpose flour
- 3 ½ oz sugar
- 3 ½ oz honey
- 1 ¾ oz raisins
- 1 ¾ oz almonds
- 1 ¾ oz pine nuts
- 1 ¾ oz citrons
- 1 ¾ oz chocolate , bitter
- baking powder
- clove
- coriander
- cinnamon
- anice seed
- butter to taste
METHOD:
- Mix spices, yeast, honey, and sugar with the boiling water and the flour.
- Add raisins (previously left to soak in water), almonds, citron, orange, pine nuts and chocolate.
- Put the mixture into an oven-dish and bake at 350°F for 30-40 minutes.
