From old Italian food tradition, one of the most famous and delicious recipe!!
- 8 pork sausages
- 2 red peppers
- Extra virgin olive oil
- Tomato paste
- Red pepper flakes
- black pitted olives (optional)
Boil sausages for 5 minutes to remove some of the fat.
Remove, let cool and cut into pieces.
Clean red peppers (remove seeds) and cut into pieces.
Chop 1/2 onion.
Add 5 tablespoons of extra virgin olive oil to a hot pan, add onion and let cook for 5 minutes.
Add red peppers and let cook for 15 minutes turning periodically.
Add sausage and let cook for another 15 minutes turning periodically.
Add water a little at a time if needed.
Add 1 tablespoon of tomato paste and mix in, oregano as needed, and red pepper flakes accordingly.
Let cook for another 5 minutes.
Make sure sausage is cooked.
Ready to serve.
Cut good italian bread and place down in pan for a few minutes to soak up juice.
