Mom’s Rice Pudding

Here is Mom’s rice pudding or Budino di Riso. One sweet taste and you’ll be reminiscing about the good ol’ days in the kitchen making Mom’s Famous Rice Pudding!



  • 3/4 cup uncooked rice
  • 2 cups milk
  • 1/3 cup sugar
  • 1/4 tsp salt
  • 1 beaten egg
  • 2/3 cup craisins
  • 1 tbsp butter
  • 1/2 tsp vanilla


  1. Bring 1-1/2 cups water to boil and stir rice into boiling water. Reduce heat to low, cover and simmer for 20 minutes.
  2. In a clean pan, combine cooked rice, 1-1/2 cups milk, sugar and salt. Cook over medium heat until thick and creamy, 15 to 20 minutes.
  3. Stir in remaining 1/2 cup milk and beaten egg. Add craisins, and cook 2 minutes, stirring constantly.
  4. Remove from heat, stir in butter and vanilla.
