Here is Mom’s Cinnamon Coffee Cake. This recipe is ideal for a weekend brunch or Friday breakfast club at work, but we wouldn’t even mind having it for dessert after a weeknight dinner!
INGREDIENTS
- 1 cup granulated sugar
- 1/2 cup butter or margarine
- 1 egg
- 1 cup buttermilk
- 2 cups sifted flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
Crumbs for topping:
- 1 cup packed brown sugar
- 2 tbsp flour
- 3 tbsp melted butter
- 1 tsp cinnamon
DIRECTIONS:
- Cream butter and sugar, then add egg. Add the dry ingredients alternately with buttermilk and soda.
- Pour half of batter into greased pan and sprinkle with half of crumbs. Then put remaining batter on top and top with remaining crumbs.
- Bake in 8″ x 12″ pan in 350 F oven for 30 min or longer.
- Crumbs for Topping: Mix together
