These cookies are a little healthier than the average cookies.
Try these insanely soft cookies!
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 1/2 cups granulated sugar, plus more for topping
- 1/4 olive oil
- Juice and zest of 1/2 lemon
- 2 large eggs
Preheat oven to 350ºF.
In a bowl, sift together flour, baking powder, and salt. Set aside.
In a second large bowl, beat eggs together with sugar, olive oil and lemon.
Fold in dry ingredients until well incorporated.
You should have a fairly soft, oily dough.
Drop by tablespoonfuls 2 inches apart onto a parchment-lined baking sheet or floured baking sheet.
Sprinkle tops with remaining sugar.
Bake for 15 to 20 minutes or until tops are puffed and edges just start to turn light golden brown.
Let cool for 5 minutes before transferring to a wire rack to cool completely.
Cookies are best enjoyed the day they are made, but will keep in an airtight container for up to 3 days.
