The Italian Rustic Apple Cake. This is another one of my rustic cakes that can be enjoyed for breakfast or as a dessert and best of all it can be put together quickly with just a whisk.
You could vary the fruit depending on your preference and use peaches, pears or plums, although I love to use apples in my version.
I sprinkle the top with a mixture of sugar and cinnamon, but you could also leave it plain and dust the top with icing sugar after it cools.
INGREDIENTS:
- 1 Cup Cake Flour
- 1 Teaspoon Baking Powder
- 1 Cup Sugar
- 3 Large Eggs
- 1 Teaspoon Vanilla Extract
- 1 Teaspoon Cinnamon
- 1/2 Cup Milk
- 7 Tablespoons Unsalted Butter At Room Temperature
- 2 Large Apples, Peeled & Cored
Topping: (Optional)
- 1 Teaspoon Cinnamon
- 3 Tablespoons Sugar
INSTRUCTIONS:
- Preheat oven to 350 degrees F.
- Lightly grease and flour a 9 inch spring-form pan.
- Whisk together the flour, baking powder, sugar, eggs, vanilla, and cinnamon.
- Stir in the milk until mixed.
- Break up the butter into pieces and stir it into the batter.
- Pour the batter into the prepared pan.
- Thinly slice the apples and arrange them around the cake in a decorative manner.
- Stir together the cinnamon and sugar and sprinkle on top of the cake.
- Bake for 20 to 35 minutes, or until a cake tester inserted into the center comes out clean.
- Cool, remove from the pan and serve.
