Visit your local farm stand and treat yourself to ripe juicy tomatoes while they are still in season and bursting with flavor.
CUCUMBER ONION AND TOMATO SALAD
Just add good crusty Italian bread to sop up the juice!
3 medium cucumbers, peeled and sliced
1/4 inch thick
1 medium red onion, sliced and separated into rings
3 medium tomatoes, cut into wedges
1/2 cup vinegar
1/4 cup sugar
1 cup water
2 teaspoons salt
1 teaspoon fresh coarse ground black pepper
1/4 cup oil
several fresh basil leaves
a pinch of oregano
Combine ingredients in a large bowl and mix well.
Refrigerate at least 2 hours before serving
NOTE: If you add a can of Italian Tuna, drained, and/or a hard-boiled egg, chopped, you have a wonderful and easy meal.
