Ciambella Lemon Cake

The Ciambella Lemon Cake. One of the most famous and delicious Italian cake.


SERVINGS: Serves 4


  • 1 lb all-purpose flour
  • 1 cup milk
  • 7 oz sugar
  • 3 ½ oz lard
  • 1 lemon zest
  • 2 eggs
  • baking powder
  • salt



  1. Make a well in the flour, and pour into it the glass of warm milk, the powdered sugar, the melted lard (or warmed butter), a pinch of salt and grated lemon rind, 2 eggs or 1 whole egg and 3 whipped yolks.
  2. Mix everything until consistent.
  3. Lastly add an envelop of yeast, leave to rest and then bake at 400° in a round buttered oven pan, putting a bowl in the center of the dish to make a hole!
  4. Sprinkle the surface with vanilla-flavored sugar or sugar grains.
