The Ciambella Lemon Cake. One of the most famous and delicious Italian cake.
SERVINGS: Serves 4
INGREDIENTS:
- 1 lb all-purpose flour
- 1 cup milk
- 7 oz sugar
- 3 ½ oz lard
- 1 lemon zest
- 2 eggs
- baking powder
- salt
PREPARATION:
- Make a well in the flour, and pour into it the glass of warm milk, the powdered sugar, the melted lard (or warmed butter), a pinch of salt and grated lemon rind, 2 eggs or 1 whole egg and 3 whipped yolks.
- Mix everything until consistent.
- Lastly add an envelop of yeast, leave to rest and then bake at 400° in a round buttered oven pan, putting a bowl in the center of the dish to make a hole!
- Sprinkle the surface with vanilla-flavored sugar or sugar grains.
