BAKED SPINACH BALLS (POLPETTE DI SPINACI)

Baked spinach meatballs are an easy and quick idea, perfect for children, but also for those who want to keep light.

INGREDIENTS:

  • 2 boxes frozen spinach
  • 4 eggs beaten
  • 2 cups breadcrumbs
  • 3/4 cup melted butter
  • 1 large onion
  • 3 ounces Romano cheese
  • Salt
  • ground pepper

 

METHOD

Thaw then drain spinach.

Chop spinach then mix with breadcrumbs and add the rest of the ingredients.

Chill for one hour.

When cold, form into 1″ balls.

Bake on ungreased cookie sheet for about 20 minutes at 375 degrees.

Drain on paper towels.

Roll balls in Romano cheese while hot.

Makes about 40 little sides, snacks or appetizers.
